A century of cooperative winemaking in Chablis

It was on 1st May 1923 that Abbé Balitrand laid the foundations of La Chablisienne, at a time when growers in the Yonne were seeking to pool their resources and secure the future of a region that had suffered greatly — from phylloxera, frost, and the economic upheaval that followed the First World War. The cooperative model offered both stability and collective ambition, and La Chablisienne grew steadily throughout the twentieth century to become the backbone of the appellation. A landmark moment came in 1999, when the estate acquired Château Grenouilles in near-monopoly, one of the seven Grand Crus of Chablis, further cementing its position at the very heart of the appellation's finest terroirs. Today, with around 300 associated growers, La Chablisienne continues to embody the collective spirit that Abbé Balitrand envisaged a century ago.

Kimmeridgian soils and the Serein valley

The vineyards of La Chablisienne stretch across the hillsides on either side of the River Serein, with varied exposures that allow the cooperative to work across the full hierarchy of Chablis — from Petit Chablis through to Premier Cru and Grand Cru. The soils are the defining feature: Kimmeridgian limestone and marl, rich in fossilised oyster shells (Ostrea virgula), which lend the wines their celebrated saline, flinty character. This ancient seabed geology, unique to the Chablis and Sancerre regions, is inseparable from the mineral tension that distinguishes a genuine Chablis from any other Chardonnay in the world.
