French Cabernet Sauvignon — Power, Structure & Elegance

Cabernet Sauvignon is arguably the most famous grape variety in the world, and France — specifically the left bank of Bordeaux — is its spiritual home. Characterised by its thick skin, small berries, and high levels of tannins and anthocyanins, Cabernet Sauvignon produces wines of extraordinary depth, complexity, and longevity.

Bordeaux: The Classic Expression

The Médoc peninsula — home to Pauillac, Saint-Julien, Margaux, Saint-Estèphe, and countless other appellations — represents the pinnacle of Cabernet Sauvignon winemaking. The gravelly soils here warm quickly in summer and drain excellently, producing perfectly ripe fruit with the firm acidity and tannins that allow these wines to age for decades.

The five Premiers Crus Classés — Mouton Rothschild, Lafite-Rothschild, Latour, Margaux, and Haut-Brion — are the most famous examples, but the entire classification system (established in 1855) provides a reliable guide to quality across more than 60 properties. Our selection includes both classified growths and excellent-value crus bourgeois, offering something for every budget.

Pauillac is the most celebrated appellation, home to three of the five Premiers Crus. Wines here tend towards the powerful end — blackcurrant, cedarwood, tobacco, and firm tannins requiring patience.

Saint-Julien offers perhaps the most consistent quality across all its châteaux — more polished and harmonious than Pauillac, with refined fruit and impeccable structure.

Margaux produces the most elegant and perfumed left-bank wines, famous for their floral character and silky texture.

Saint-Estèphe delivers robust, earthy wines with higher tannins and a more austere style in youth, but remarkable longevity.

Cabernet Sauvignon in the Languedoc

The Languedoc has emerged as an exciting alternative source of quality Cabernet Sauvignon. Here, the variety is often blended with Syrah, Grenache, and Merlot to produce wines of generous fruit and accessible structure at significantly lower prices than Bordeaux. Look for wines labelled Pays d'Oc IGP for the best examples.

Tasting Notes

Classic French Cabernet Sauvignon shows:

→    Dark fruit: blackcurrant, blackberry, dark plum

→    Secondary notes: cedar, cigar box, graphite, green pepper (when slightly underripe)

→    Structure: firm tannins, good acidity, full body

→    With age: leather, tobacco, truffle, secondary fruit complexity

Serving and Ageing

Young Bordeaux Cabernet Sauvignon benefits from decanting — allow 1-2 hours for wine under 10 years old. For mature vintages (15+ years), decant carefully and serve within an hour to avoid the wine fading.

Ideal serving temperature is 16-18°C. A good Bordeaux from a classified château will typically peak 8-15 years after vintage.
