The essence of Chablis in its purest, most refined expression

  • From one of Chablis' most distinguished Grand Cru vineyards, Les Preuses is renowned for its unique terroir, which imparts an uncommon mineral character to the wine. This distinctive signature reflects the limestone-rich soils that define the appellation.
  • A wine of remarkable balance, combining aromatic richness with incisive acidity. It pairs beautifully with refined dishes—lobster, Dover sole, or chicken in cream sauce—where its mineral spine complements rather than overwhelms.
  • Carefully aged to reveal the true character of Chardonnay whilst introducing subtle spice and toasted notes. The élevage is restrained, allowing the fruit and terroir to remain paramount, with no oak dominance.

Product features : La Chablisienne Chablis Grand Cru les Preuses 2021

Breeding
20 months on fine lees, in stainless steel and small oak barrels
On the eye
Brilliant golden hue with bright reflections, suggesting considerable vitality and ageing potential.
On the nose
Luxuriant aromas of white flowers and stone fruits, with a discreet oakiness that never masks the purity of the fruit. The bouquet unfolds with white peach and a hint of hazelnut.
In the mouth
Voluptuous texture with a long, mineral finish. Ripe yellow fruit notes—apricot and mirabelle—meld with a chalky minerality that lingers. The acidity is refined, not aggressive, providing structure without harshness.
M. Francois
This wine exemplifies what makes Les Preuses exceptional: perfect equilibrium between aromatic intensity and mineral precision. For those who appreciate serious white Burgundy, this is an essential reference point. Its complexity rewards both immediate drinking and patient cellaring.

LA CHABLISIENNE

Based in Chablis in the Yonne, La Chablisienne is the appellation's only cooperative, farming 1,250 hectares of Kimmeridgian limestone and marl and accounting for more than a quarter of all Chablis produced. Founded on 1st May 1923 by Abbé Balitrand, the cooperative today unites around 300 grower-members producing exclusively white Chardonnay, with both Terra Vitis and organic certification underpinning its environmental commitments. At Halles Quercamps, we have selected this estate for the consistency of its range, the characteristic mineral expression of the Chablis terroir, and the seriousness of its approach to sustainable viticulture. A dependable reference for anyone seeking the true character of the appellation.
