Mineral elegance and crystalline freshness in perfect balance

  • Vaulorent lies adjacent to the Grand Cru vineyard of Les Preuses, sharing the same Kimmeridgian limestone subsoil that defines the finest expressions of Chablis. This proximity to classified land reflects the site's inherent quality and geological distinction.
  • The vines are established at thirty years or more, allowing deep root penetration into the chalk-rich terroir. Mature vines of this age produce concentrated fruit whilst maintaining the mineral precision essential to Premier Cru Chablis.
  • This vintage demonstrates genuine cellaring potential. The structure and acidity suggest graceful development over the coming decade, rewarding those who prefer to lay down their Chablis rather than drink immediately upon release.

Breeding
On fine lees in vats and barrels for approximately 15 months
On the eye
Pale yellow with greenish highlights
On the nose
Mineral notes of flint and wet stone emerge first, followed by white orchard fruits—green apple and pear—with subtle herbaceous undertones characteristic of the appellation.
In the mouth
The palate mirrors the nose with admirable precision. Crisp acidity and saline minerality provide structure and drive, whilst white fruit flavours persist with energy and definition. The finish is lengthy and dynamic, leaving a clean mineral impression.
M. Francois
Vaulorent's profile suits seafood with natural elegance. Turbot, sole, and other white fish with delicate flesh find an ideal partner here. The wine's mineral backbone and freshness also complement shellfish preparations and lighter crustacean dishes. Serve well-chilled at 10–12°C to appreciate its full aromatic range.

LA CHABLISIENNE

Based in Chablis in the Yonne, La Chablisienne is the appellation's only cooperative, farming 1,250 hectares of Kimmeridgian limestone and marl and accounting for more than a quarter of all Chablis produced. Founded on 1st May 1923 by Abbé Balitrand, the cooperative today unites around 300 grower-members producing exclusively white Chardonnay, with both Terra Vitis and organic certification underpinning its environmental commitments. At Halles Quercamps, we have selected this estate for the consistency of its range, the characteristic mineral expression of the Chablis terroir, and the seriousness of its approach to sustainable viticulture. A dependable reference for anyone seeking the true character of the appellation.
