Breeding
Aged on fine lees in oak barrels and stainless steel vats for 12 to 18 months, imparting richness and complexity whilst preserving the wine's fresh fruit character
On the eye
Pale golden yellow with bright, luminous reflexes.
On the nose
A complex and refined bouquet: white stone fruits, honeyed notes, and subtle oak influence. The aromatics evolve with time, revealing further layers.
In the mouth
Considerable depth and precision on the palate. Citrus, white flowers, and a distinctive minerality are supported by crisp acidity and excellent structure. The finish is clean and persistent.

LA CHABLISIENNE

Based in Chablis in the Yonne, La Chablisienne is the appellation's only cooperative, farming 1,250 hectares of Kimmeridgian limestone and marl and accounting for more than a quarter of all Chablis produced. Founded on 1st May 1923 by Abbé Balitrand, the cooperative today unites around 300 grower-members producing exclusively white Chardonnay, with both Terra Vitis and organic certification underpinning its environmental commitments. At Halles Quercamps, we have selected this estate for the consistency of its range, the characteristic mineral expression of the Chablis terroir, and the seriousness of its approach to sustainable viticulture. A dependable reference for anyone seeking the true character of the appellation.
