Product features : La Chablisienne Chablis 1er Cru Vaillons 2018

Breeding
Approximately 12 to 15 months on fine lees. Oak ageing is subtle, serving solely to add amplitude and complexity without masking the purity of the fruit.
On the eye
Pale yellow with green glints. Bright and clear, inviting immediate attention.
On the nose
Delicate white flowers and green lemon aromas, with the distinctive mineral character that defines the Chablis appellation. The bouquet unfolds gradually, revealing subtle complexity.
In the mouth
A lively, mineral-driven attack that develops into white stone fruits—pear and green apple—with a faint buttery undertone. The finish is clean and persistent, with excellent definition.
M. Francois
Vaillons 2018 achieves that rare balance between mineral freshness and aromatic substance. It is equally at home as an aperitif or paired with refined cuisine—seafood, poultry, or aged goat's cheese. A genuine expression of northern Burgundy terroir, worthy of discovery and contemplation.

Nicolas françois, propriétaire passionné des halles de quercamps

LA CHABLISIENNE

Based in Chablis in the Yonne, La Chablisienne is the appellation's only cooperative, farming 1,250 hectares of Kimmeridgian limestone and marl and accounting for more than a quarter of all Chablis produced. Founded on 1st May 1923 by Abbé Balitrand, the cooperative today unites around 300 grower-members producing exclusively white Chardonnay, with both Terra Vitis and organic certification underpinning its environmental commitments. At Halles Quercamps, we have selected this estate for the consistency of its range, the characteristic mineral expression of the Chablis terroir, and the seriousness of its approach to sustainable viticulture. A dependable reference for anyone seeking the true character of the appellation.
