Breeding
Six months on fine lees and in tank
On the eye
Pale gold with brilliant clarity and golden reflections. Clean and inviting appearance.
On the nose
Grilled and toasted notes emerge first, followed by white stone fruit—pear and green apple—with a brioche undertone. Aromatic complexity without heaviness.
In the mouth
Lively attack with good acidity, developing into a rounder, more ample mid-palate. The finish is clean and mineral-driven, with lingering white fruit and a subtle saline character.
M. Francois
Pairs beautifully with brioche-based canapés topped with foie gras, or grilled king prawns marinated in herbs. The wine's mineral backbone and moderate alcohol make it equally suited to lighter seafood preparations and soft cheeses.

LA CHABLISIENNE

Based in Chablis in the Yonne, La Chablisienne is the appellation's only cooperative, farming 1,250 hectares of Kimmeridgian limestone and marl and accounting for more than a quarter of all Chablis produced. Founded on 1st May 1923 by Abbé Balitrand, the cooperative today unites around 300 grower-members producing exclusively white Chardonnay, with both Terra Vitis and organic certification underpinning its environmental commitments. At Halles Quercamps, we have selected this estate for the consistency of its range, the characteristic mineral expression of the Chablis terroir, and the seriousness of its approach to sustainable viticulture. A dependable reference for anyone seeking the true character of the appellation.
