Two centuries of family history in the Var hills

It was Philémon Gavoty who first planted vines here in 1806, on the terroir of Cabasse — a commune tucked into the hills of inland Provence, far from the coastal glamour with which the region is sometimes associated. The estate has remained in family hands ever since, and since 1985 it has been guided by Roselyne Gavoty, who has steered it through a period of both agricultural renewal and growing recognition.

The estate's most celebrated cuvée, Clarendon, carries a distinctly literary flavour: the name is borrowed from the pseudonym used by Bernard Gavoty, a member of the family who served as music critic for Le Figaro. That cultural thread — rigorous, cultivated, rooted in French intellectual life — runs quietly through everything the estate does.

Terroir: limestone plateaux and Var hillsides

The 50 hectares of Domaine Gavoty sit on a combination of argilo-calcaire soils and a Triassic plateau of limestone and clay, characteristic of the Var's interior hills. Exposures vary across the estate's different parcels, giving the winemaking team a palette of conditions to work with — from slopes that favour freshness and aromatic precision to positions that build structure and depth. This diversity of terroir is reflected in the breadth of the range, which spans red, white and rosé wines under the Côtes de Provence appellation.

The grape varieties planted read as a roll-call of Provençal and Mediterranean viticulture: Cinsault, Grenache, Rolle, Syrah, Carignan and Cabernet Sauvignon each contribute to blends that are assembled with care and consistency across the vintages.

Domaine Gavoty received its organic certification in 2020, formalising a direction that had long been implicit in the estate's approach to the land. Working without synthetic herbicides or pesticides across 50 hectares demands both conviction and logistical rigour — particularly in a region where vine disease pressure can be significant. The certification is a meaningful marker, not a marketing exercise, and it underpins the quality and integrity of every bottle the estate produces.

The wines: reds, whites and rosés from Côtes de Provence

Rosé — The backbone of the range, as one would expect from a leading Côtes de Provence estate. Pale, precise and driven by Cinsault and Grenache, these are rosés built for the table as much as the terrace.
White — Led by Rolle (Vermentino), the whites show the aromatic lift and saline freshness that the variety delivers on well-drained limestone soils.
Red — Structured blends drawing on Syrah, Grenache, Cabernet Sauvignon and Carignan, with the depth and grip to reward a few years in the cellar.
