Breeding
In stainless steel vats to preserve freshness and fruity aromas.
On the eye
Pale salmon-pink robe with bright, luminous reflections.
On the nose
Delicate aromatics of strawberry and peach, with subtle white floral notes. The bouquet is refined and inviting, true to the vintage's character.
In the mouth
The fruit-driven palate reveals admirable balance between ripe stone fruit and a crisp mineral finish. Grenache and Cinsault provide roundness and generosity, whilst Syrah contributes structure and subtle spice. A wine of genuine freshness and poise.
M. Francois
This rosé excels with Provençal classics—bouillabaisse, pistou soup, or aïoli. Its aromatic profile and acidity make it particularly suited to coriander, garlic and chilli-based dishes, as well as lighter curries. An accomplished expression of its appellation, and a natural choice for warm-weather entertaining.

DOMAINE GAVOTY

Based at Cabasse in the Var, Domaine Gavoty covers 50 hectares within the Côtes de Provence appellation, on argilo-calcaire soils and a Triassic limestone plateau in inland Provence. Founded in 1806 by Philémon Gavoty and led since 1985 by Roselyne Gavoty, the estate carries a strong family identity — reflected in its flagship cuvée Clarendon, named after the pen name of Bernard Gavoty, music critic at Le Figaro. Certified organic since 2020, it works Cinsault, Grenache, Rolle, Syrah, Carignan and Cabernet Sauvignon to produce reds, whites and rosés of real character. At Halles Quercamps, we selected this estate for its organic rigour, its Provençal roots, and the precision of its blends. A dependable reference from Provence.
