Bergerie du Capucin is a 15-hectare estate rooted in Lauret, in the Hérault, at the heart of the Languedoc appellation. Founded in 2008 by Guilhem Viau, it represents a personal and committed vision of the Languedoc vineyard, expressed through clay-limestone terroirs of genuine complexity.

An estate born from a break and a family legacy

Guilhem Viau did not come to winemaking by chance. After ten years working within a cooperative cellar, he chose in 2008 to strike out on his own — a deliberate and considered rupture. The name he gave his estate is no accident either: Bergerie du Capucin takes its title from the lieu-dit where his ancestor Jeanne kept her sheepfold, a quiet act of homage that anchors the project in both place and family memory. From the outset, Viau's ambition has been to produce wines that speak clearly of where they come from, without artifice.

Terroir and viticulture

The estate's 15 hectares sit on clay-limestone soils over marly subsoils, a combination that lends both freshness and structure to the wines. The encépagement is firmly rooted in the southern tradition: Syrah, Grenache, Mourvèdre, Carignan, and Cinsault form the backbone of the range, each variety finding its place according to the parcel. Yields are held to 40 hl/ha, a discipline that concentrates expression without sacrificing balance. In 2024, a new eco-responsible winery was inaugurated within the vines themselves — a significant investment that reflects Viau's long-term commitment to working in harmony with his terroir.

Winemaking approach
