On the nose
Aromatic expression of pears and white flowers, with citrus notes that remain fresh and refined rather than assertive. A subtle, inviting bouquet.
In the mouth
The palate reflects the terroir of Pic Saint-Loup with considerable finesse. Viognier's characteristic apricot character emerges without dominating; the wine maintains poise and definition throughout.
Guilhem Viau has crafted a white of considerable merit here, reconciling southern intensity with northern restraint. The Dame Jeanne cuvée avoids the pitfall of heaviness through exemplary oak handling. This is gastronomy wine: ideally paired with fine fish—sea bass, red mullet—or shellfish such as langoustines and scallops.
