BERGERIE DU CAPUCIN
Established in Lauret, Hérault, Bergerie du Capucin covers 15 hectares within the Languedoc appellation, on clay-limestone soils over marly subsoils. Guilhem Viau founded the estate in 2008 after a decade working within a cooperative cellar, naming it in tribute to his ancestor Jeanne, whose sheepfold once stood on this very lieu-dit. The range — red, white, and rosé — is built around Syrah, Grenache, Mourvèdre, Carignan, and Cinsault, vinified at yields of 40 hl/ha. At Halles Quercamps, we have selected this estate for the coherence of its project, the depth of its terroirs, and the rigour with which Guilhem Viau captures the true character of the Languedoc in every cuvée. A producer well worth following.
