Ageing for 3 months in stainless steel vat on fine lees
On the eye
Pale golden yellow with amber glints. Clear and luminous.
On the nose
Aromas of pear and white flowers, with citrus notes. Fresh and inviting, with subtle apricot undertones that speak to the Viognier's character.
In the mouth
The palate captures the beauty and colour of Pic Saint-Loup. Viognier's aromatic character is present without excess; the wine maintains elegant balance between richness and mineral-driven freshness throughout.

Guilhem Viau has crafted a white of genuine distinction here. The cuvée Dame Jeanne reconciles southern power with northern elegance, avoiding the trap of heaviness through masterful wood handling. This is gastronomic wine par excellence: serve with fine white fish—sea bass, red mullet—or shellfish such as langoustines and scallops.

Bergerie du Capucin is a wine estate in the Languedoc (Hérault), at the foot of Pic Saint-Loup. Organically farmed vineyard. Mediterranean grapes: Syrah, Grenache, Mourvèdre (reds), Roussanne, Marsanne, Viognier (whites). Appellations: Languedoc, Terrasses du Larzac. The wines express the diversity of Languedoc terroirs.
