List of products by brand DOMAINE BILLAUD-SIMON

Established across 17 hectares of Kimmeridgian marl in Chablis (Yonne), Domaine Billaud-Simon produces exclusively Chardonnay under the Chablis appellation, with organic certification taking effect from the 2025 vintage. Founded in 1815 by Charles Louis Noël Billaud, the estate has shaped two centuries of Chablis history before passing in 2014 to the Faiveley family, who have brought fresh momentum whilst preserving the mineral precision and parcel-level rigour that define these wines. At Halles Quercamps, we have selected this estate for the characteristic tension of its Chablis, the purity of expression on Kimmeridgian soils, and a genuine commitment to organic viticulture. The address of choice for lovers of Chablis in its most direct, most mineral form.

Domaine Billaud-Simon represents two centuries of unbroken presence on the slopes of Chablis. Spread across 17 hectares of Kimmeridgian marl and limestone, the estate produces exclusively white wines from Chardonnay, with organic certification coming into force from the 2025 vintage.

A Chablis estate since 1815

The story begins in 1815, when Charles Louis Noël Billaud established what would become one of the most enduring names in the Chablis appellation. The estate took its current name following the marriage of Jean Billaud to Renée Simon — a union that would lend the domaine the identity it carries to this day. Through the upheavals of two centuries, Domaine Billaud-Simon remained a constant presence in the Yonne, accumulating parcels across the appellation's most expressive hillsides and building a reputation grounded in mineral fidelity rather than commercial compromise.

A new chapter under the Faiveley family

In 2014, Domaine Faiveley — one of Burgundy's most respected négociant families — acquired Billaud-Simon, bringing with it the resources and long-term vision that the estate's next chapter demanded. Far from disrupting the estate's identity, the Faiveley family has worked to deepen it: maintaining the parcel-by-parcel approach, investing in the vineyard, and committing to the transition to organic farming. That commitment becomes official with the 2025 vintage, when certification under Agriculture Biologique takes full effect — a milestone that reflects both the estate's ambition and the direction of serious Chablis viticulture more broadly.

Kimmeridgian terroir: the soul of Chablis

The 17 hectares of Domaine Billaud-Simon are planted exclusively with Chardonnay on the Kimmeridgian soils that define the finest expressions of the Chablis appellation. This ancient seabed geology — a dense matrix of marl and argillaceous limestone, rich in fossilised oyster shells — imparts the saline, flinty character that distinguishes Chablis from all other white Burgundy. Parcels are oriented across south, south-east, and south-west-facing slopes, ensuring optimal ripening while preserving the natural freshness and tension that are the hallmark of the appellation. It is this combination of geology and exposition that gives Domaine Billaud-Simon its particular clarity of style.

The wine range

The estate produces exclusively white wines from Chardonnay across the Chablis appellation hierarchy:

  • Chablis AOC — the estate's entry point, already displaying the characteristic mineral tension and citrus precision of the Kimmeridgian terroir.
  • Chablis Premier Cru — wines from named premier cru parcels, offering greater depth, structure, and ageing potential whilst retaining the estate's signature linearity.
  • Chablis Grand Cru — the summit of the range, drawn from the appellation's most celebrated hillside, combining richness and the electric mineral energy that only grand cru Kimmeridgian soils can deliver.

All wines are produced as white only, in keeping with the single-varietal, single-colour discipline that has defined this estate across its entire history.

Why we have selected Domaine Billaud-Simon

We have listed Domaine Billaud-Simon for three reasons that matter to us as merchants. First, the terroir is irreproachable: 17 hectares of genuine Kimmeridgian soils, farmed with increasing rigour and shortly to carry the organic certification that confirms what the viticulture already demonstrates. Second, the continuity of style: despite the change of ownership in 2014, the wines have retained the austere, precise, mineral character that made Billaud-Simon a reference address in Chablis — the Faiveley family has been a custodian, not a disruptor. Third, the range offers genuine depth across the appellation hierarchy, from village to grand cru, making it a reliable source for both everyday drinking and serious cellaring.

We recommend these wines to enthusiasts who value Chablis at its most uncompromising: taut, saline, and built for the table. They are a natural match for oysters and shellfish, as the geology almost demands, but equally compelling alongside grilled turbot, a fine sole meunière, or a well-aged Chaource.
