Pale gold with green reflections
On the nose
Mineral notes predominate, accompanied by subtle spice and white stone fruit. The bouquet develops gradually, revealing layers of complexity characteristic of premier cru Chablis.
In the mouth
Fruit-forward entry with pronounced floral notes. The palate shows excellent balance between acidity and body, with a persistent mineral finish that speaks clearly to terroir.
A complex, elegant and harmonious wine that exemplifies premier cru Chablis at its finest. The mineral backbone and floral character make it an ideal companion to shellfish, white fish and delicate seafood preparations. Drink now or cellar for five to eight years.

Domaine Billaud-Simon is a wine estate in Chablis (Burgundy). Founded in 1815. Around 20 hectares of vines. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Mont de Milieu, Montée de Tonnerre, Vaillons), Chablis Grand Cru (Les Clos, Vaudésir, Blanchots, Les Preuses). Acquired by Faiveley in 2014. Wines of great minerality and fine tension.
