Breeding
Principal ageing in stainless steel vats to preserve minerality and tension.
On the eye
Pale gold with greenish reflections. White stone fruit aromas: vineyard peach, preserved lemon and Granny Smith apple.
On the nose
The bouquet marries candied fruit with pronounced minerality. Subtle spice notes emerge as the wine opens, revealing the complexity of extended élevage in oak.
In the mouth
Elegant entry with notes of gingerbread spice. The mid-palate shows good structure and tension. The finish is refined, marked by a distinctive saline character that defines the appellation.
M. Francois
A wine of considerable poise alongside shellfish—particularly langoustines and lobster, where its mineral precision and acidity provide perfect counterpoint to the richness of the seafood. Also excellent with white fish preparations and creamy sauces where restraint is valued over opulence.

Domaine Billaud-Simon is a wine estate in Chablis (Burgundy). Founded in 1815. Around 20 hectares of vines. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Mont de Milieu, Montée de Tonnerre, Vaillons), Chablis Grand Cru (Les Clos, Vaudésir, Blanchots, Les Preuses). Acquired by Faiveley in 2014. Wines of great minerality and fine tension.
