Vaudesir is among Chablis's finest Grand Cru sites, and Billaud-Simon's interpretation exemplifies the appellation's mineral precision. This wine rewards drinking now for its vibrant freshness, yet will develop greater complexity over five to eight years. Excellent with shellfish, lobster, and creamed fish dishes. Domaine Billaud-Simon is a wine estate in Chablis (Burgundy). Founded in 1815. Around 20 hectares of vines. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Mont de Milieu, Montée de Tonnerre, Vaillons), Chablis Grand Cru (Les Clos, Vaudésir, Blanchots, Les Preuses). Acquired by Faiveley in 2014. Wines of great minerality and fine tension.
