Established across 17 hectares of Kimmeridgian marl in Chablis (Yonne), Domaine Billaud-Simon produces exclusively Chardonnay under the Chablis appellation, with organic certification taking effect from the 2025 vintage. Founded in 1815 by Charles Louis Noël Billaud, the estate has shaped two centuries of Chablis history before passing in 2014 to the Faiveley family, who have brought fresh momentum whilst preserving the mineral precision and parcel-level rigour that define these wines.
