Breeding
Approximately 12 months on fine lees to stabilise the wine whilst retaining its ethereal character.
On the eye
Pale yellow with silver-green highlights
On the nose
Lemon zest and pink grapefruit with white flower notes. The bouquet develops gradually, revealing the wine's mineral character.
In the mouth
Crisp attack with pronounced mineral definition. The palate shows good structure and length, with citrus fruit balanced by subtle salinity. A dry finish with lingering acidity.
Versatile at table: excellent as an aperitif, and particularly suited to shellfish, white fish, and lighter seafood preparations. The wine's natural acidity and mineral backbone make it an ideal companion to oysters, scallops, and grilled sole. Also complements goat's cheese and fresh vegetable dishes.

Domaine Billaud-Simon is a wine estate in Chablis (Burgundy). Founded in 1815. Around 20 hectares of vines. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Mont de Milieu, Montée de Tonnerre, Vaillons), Chablis Grand Cru (Les Clos, Vaudésir, Blanchots, Les Preuses). Acquired by Faiveley in 2014. Wines of great minerality and fine tension.
