On the eye
Pale gold with greenish glints, bright and luminous in the glass.
On the nose
Ripe citrus notes—lemon and grapefruit—mingle with white flowers and a distinctive mineral undertone characteristic of the terroir.
In the mouth
Vibrant attack with excellent definition. The palate displays good length and tension, finishing with crisp acidity and lingering mineral notes.
A wine of considerable refinement, particularly suited to seafood—oysters, white fish, and shellfish all find their match here. The mineral backbone and restrained fruit make this an excellent aperitif wine as well. Drink now or cellar for five to eight years.

Domaine Billaud-Simon is a wine estate in Chablis (Burgundy). Founded in 1815. Around 20 hectares of vines. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Mont de Milieu, Montée de Tonnerre, Vaillons), Chablis Grand Cru (Les Clos, Vaudésir, Blanchots, Les Preuses). Acquired by Faiveley in 2014. Wines of great minerality and fine tension.
