List of products by brand FAMILLE FABRE

Based in Luc-sur-Orbieu in the Aude, Famille Fabre has worked the stony terraces at the foot of the Alaric massif under the Languedoc appellation for sixteen unbroken generations since 1605. Long before organic viticulture became fashionable in the South of France, Louis Fabre committed to certified organic farming in 1991 — a decision that shaped the estate's identity. Today he is joined by his daughters Clémence, Jeanne and Paule. In 2020, the Guide Hachette named him Winemaker of the Year. At Halles Quercamps, we have selected this estate for the rigour of its organic and HVE-certified viticulture, the depth of its Syrah, Grenache and Carignan reds, and a family project rooted in its terroir for over four centuries. A benchmark of contemporary Languedoc.

Since 1605, Famille Fabre has tended its vines on the stony terraces of Luc-sur-Orbieu, in the Aude, at the foot of the Alaric massif. Sixteen generations of independent vignerons, a pioneering conversion to organic farming in 1991: this estate embodies a demanding and enduring vision of the Languedoc appellation.

Four centuries of independent viticulture

Few estates anywhere in France can claim an unbroken family lineage stretching back to 1605. Famille Fabre is one of them. For over four hundred years, successive generations have farmed the same land around Luc-sur-Orbieu, in the heart of the Aude, building a body of knowledge that no consultant can replicate. When Louis Fabre took the estate firmly in hand in 1982, he chose not to follow the cooperative model that dominated the Languedoc at the time. Instead, he doubled down on independent production and, crucially, initiated the conversion to organic farming as early as 1991 — a full decade before the movement gained real momentum in the region. That decision was not a marketing choice; it was a conviction. Today, Louis works alongside his three daughters, Clémence, Jeanne and Paule, ensuring that the estate's values carry forward into a seventeenth generation. In 2020, the Guide Hachette recognised his contribution by naming him Winemaker of the Year — a distinction that reflects both the quality of the wines and the coherence of the project behind them.

Two terroirs, one Alaric

The estate draws on two distinct and complementary terroirs. Around the Château de Luc, the vines grow on stony terracesterrasses caillouteuses — that retain heat through the day and release it slowly at night, encouraging slow, even ripening. The amphitheatre-like setting, fully south-facing, maximises sunlight exposure across the growing season. The second terroir, known as La Grande Courtade, sits on clay-limestone soils that bring freshness and mineral tension to the wines, particularly the whites and rosés. Together, these two soil types allow Famille Fabre to express the full breadth of the Languedoc appellation, from structured, age-worthy reds to aromatic, food-friendly whites.

Certified organic and HVE: a long-standing commitment

Famille Fabre holds both organic certification (Agriculture Biologique) and HVE (Haute Valeur Environnementale) status. These are not recent additions to a label — they are the formal recognition of a philosophy adopted more than thirty years ago. No systemic pesticides, careful soil management, and a respect for the natural balance of the vineyard ecosystem: the certifications simply confirm what has been the estate's practice since 1991.

The wine range

Famille Fabre produces red, white and rosé wines under the Languedoc appellation, working with a palette of traditional southern varieties:

  • Reds: built primarily on Syrah, Grenache and Carignan, with Mourvèdre adding structure and longevity; expect depth, dark fruit and garrigue notes with real ageing potential.
  • Whites: crafted from Grenache Blanc, offering freshness and a characteristic southern generosity without heaviness.
  • Rosés: drawing on Cinsault and Grenache for pale, dry, food-friendly styles suited to the table rather than the aperitif alone.

Why we have selected Famille Fabre

At Halles Quercamps, we have been listing Famille Fabre for the clarity of its convictions as much as for the quality of its wines. Three reasons stand out. First, the depth of the organic commitment: 1991 is not a recent conversion date, and it shows in the health and balance of the vines. Second, the consistency of the red wines: the Syrah-Grenache-Carignan blends from the Alaric terraces are among the most reliable expressions of the Languedoc appellation at their price point — structured, honest, and genuinely cellar-worthy. Third, the family continuity: with Louis and his three daughters working the estate together, there is a coherence of vision that we find increasingly rare. We recommend these wines to enthusiasts who appreciate the Languedoc at its most serious — and to anyone looking for a southern red that will reward a few years in the rack. At the table, the reds pair particularly well with slow-roasted lamb, aged hard cheeses, or a cassoulet from the neighbouring Aude tradition.
