Pale salmon hue with subtle blue-tinged reflections. Clear and inviting.
On the nose
Wild strawberry and raspberry lead, with a secondary note of crisp apple. The aromatics are restrained and elegant rather than showy—characteristic of serious organic rosé.
In the mouth
Lively acidity balanced against a gentle roundness. Red-fruit flavours persist with pleasant tartness. The finish is clean and appetising, leaving you wanting another glass.

I find this a particularly honest rosé. The organic credentials are not a marketing device but reflect genuine care in the vineyard and cellar. Pair it with grilled poultry—spiced paprika preparations work especially well—or with simply dressed summer vegetables. It's the sort of wine that improves an afternoon without demanding the occasion be special. Drink it young, at cellar temperature or lightly chilled.

FAMILLE FABRE

Based in Luc-sur-Orbieu in the Aude, Famille Fabre has worked the stony terraces at the foot of the Alaric massif under the Languedoc appellation for sixteen unbroken generations since 1605. Long before organic viticulture became fashionable in the South of France, Louis Fabre committed to certified organic farming in 1991 — a decision that shaped the estate's identity. Today he is joined by his daughters Clémence, Jeanne and Paule. In 2020, the Guide Hachette named him Winemaker of the Year. At Halles Quercamps, we have selected this estate for the rigour of its organic and HVE-certified viticulture, the depth of its Syrah, Grenache and Carignan reds, and a family project rooted in its terroir for over four centuries.
