12 months in French oak barrels for part of the wine and in oval vats for the remainder
On the eye
Deep garnet colour.
On the nose
Red and dark berries, tapenade, black olives, with subtle herbaceous notes characteristic of the appellation.
In the mouth
Rich and harmonious, with concentrated dark fruit, violet, and a long, complex finish marked by fine spice and mineral grip.

I recommend this wine with charcuterie and traditional Occitan dishes—the structure and dark fruit weight carry well alongside cured meats and aged cheeses.
