List of products by brand CHATEAU SALITIS
Château Salitis extends across 110 hectares at Conques-sur-Orbiel in the Aude, within the Cabardès appellation. Farmed organically by the Marandon-Maurel family, this estate produces reds, whites and rosés that speak directly to the singular character of a terroir poised between Atlantic and Mediterranean influences.
A family estate rooted in Languedoc history
The origins of Château Salitis reach back into the religious heritage of the Languedoc: the estate was once a dependency of the Abbaye de Lagrasse, one of the great Benedictine abbeys of the region. That long history of careful land stewardship has left its mark. The Marandon-Maurel family took over in 1986, and across five generations they have built a domaine of considerable scale and coherence. Today, Anne Marandon-Maurel and Frédéric Maurel oversee every aspect of the estate, from vine to bottle, with a clear sense of place and purpose. The Cabardès appellation itself is one of the lesser-known jewels of Languedoc-Roussillon: perched on the southern slopes of the Montagne Noire, it sits at the crossroads of two climatic worlds, and that duality is written into every wine produced here.
Terroir: soils, exposure and grape varieties
The 110 hectares of Château Salitis are planted across two principal soil types. Clay-limestone soils suit the Mediterranean varieties — Grenache and Syrah — providing the mineral backbone and water retention that these grapes require. Gravels and stony soils are reserved for the Atlantic varieties: Merlot, Cabernet-Sauvignon, Cabernet Franc and Malbec. The south-facing aspect on the slopes of the Montagne Noire ensures excellent ripening while the altitude and the influence of the Atlantic to the north-west temper the heat, preserving freshness and aromatic precision. This interplay between warmth and cool air is the defining characteristic of Cabardès, and it is what gives the wines of this estate their particular balance: ripe but never heavy, structured but never austere.
Organic farming: a long-standing commitment
Château Salitis holds full organic certification, a commitment that reflects both the family's respect for their land and their conviction that the finest expression of Cabardès comes from healthy, living soils. Across 110 hectares, that is no small undertaking. The estate forgoes synthetic herbicides, pesticides and fertilisers, working instead with cover crops, careful canopy management and attentive observation of each parcel. The result is a vineyard in balance, producing fruit of genuine concentration and clarity.
The wine range at Château Salitis
The estate produces wines across three colours, each reflecting the breadth of the Cabardès appellation and the diversity of varieties cultivated on the estate:
- Red wines: the flagship of the estate, blending Atlantic and Mediterranean varieties for wines of depth, structure and aromatic complexity. The 2022 Rouge was awarded a maximum-score Coup de Cœur by the 2025 Hachette Guide.
- White wines: produced from the estate's white varieties, offering freshness and minerality drawn from the clay-limestone soils of the Cabardès.
- Rosé wines: expressive and food-friendly, reflecting the sun-drenched character of the southern Languedoc-Roussillon.
Why we have selected Château Salitis
At Halles Quercamps, we do not list estates lightly. Château Salitis earned its place on our shelves for three clear reasons. First, the integrity of its organic approach across a substantial 110-hectare domaine in the Cabardès appellation demonstrates a genuine, long-term commitment rather than a marketing exercise. Second, the precision of the parcel-by-parcel work — matching variety to soil type across clay-limestone and gravel plots — produces wines with real identity and a sense of place. Third, the recognition by the 2025 Hachette Guide, which awarded a maximum-score Coup de Cœur to the 2022 Rouge, confirms what we have long believed: this is serious, cellar-worthy Cabardès. We recommend these wines to enthusiasts who enjoy exploring the lesser-known appellations of Languedoc-Roussillon, and to those who appreciate organic viticulture backed by genuine technical rigour. At the table, the reds pair beautifully with slow-roasted lamb, duck confit or aged hard cheeses.
