Château Ollieux Romanis stands today among the estates that have helped redefine what Corbières can be. Across 60 hectares farmed organically in Montséret, deep in the Aude, Pierre Bories practises a demanding viticulture rooted in one of the Languedoc's most compelling terroirs.
A domaine founded in 1868, reunified in 2006
The story of Château Ollieux Romanis begins in 1868 in the village of Montséret, at the heart of the Corbières appellation. For over a century the property changed hands and, at some point in the nineteenth century, was divided into two separate estates. When Pierre Bories arrived in 2001, he inherited a domaine in grave financial difficulty — but also one sitting on exceptional raw material. Over the years that followed, he rebuilt the vineyards, overhauled the winery, and steadily raised the estate's profile across the region. Then, in 2006, he acquired the neighbouring Château Les Ollieux, reuniting the two properties that had been separated since 1872 and restoring the original holding to something close to its historical extent.
Terroir: red sandstone, clay and puddingstone on south-facing hillsides
The vineyards of Château Ollieux Romanis occupy the hillsides of Roquesestiére, with a predominantly south and south-east exposure that maximises ripening in this warm Mediterranean climate. The soils are a mosaic of red Mediterranean sandstone (grès rouge), red clay, puddingstone (poudingue) and limestone — a combination that brings both structure and a mineral freshness to the wines. The principal red varieties are Carignan, Grenache, Syrah and Mourvèdre, planted across the 60 hectares; for the whites, Roussanne and Marsanne provide the aromatic backbone. This diversity of soil types and grape varieties allows the estate to produce a range that is genuinely expressive of the Corbières in all its complexity.
Certified organic farming, with biodynamic ambitions
The estate holds organic certification and is engaged in a conversion towards biodynamic practices — a commitment that reflects Pierre Bories's conviction that the quality of the wine begins in the soil. Chemical herbicides and synthetic treatments have been eliminated, and the vineyard is managed to encourage biodiversity and soil life. This approach, demanding in a region that can present its own phytosanitary challenges, is central to the identity of the estate and to the precision of character that distinguishes its wines.
The wine range
Château Ollieux Romanis produces red, white and rosé wines under the Corbières appellation, in Languedoc-Roussillon. The range spans several cuvées, each reflecting a different expression of the estate's terroir:
- Reds: structured, warm and age-worthy, built on Carignan, Grenache, Syrah and Mourvèdre — the backbone of the Corbières appellation
- Whites: aromatic and textured, led by Roussanne and Marsanne, with a freshness that belies the southern latitude
- Rosés: dry and precise, reflecting the Mediterranean character of the terroir without excess weight
Why we have selected Château Ollieux Romanis
We began listing Château Ollieux Romanis because Pierre Bories's trajectory is, in itself, a guarantee of seriousness. Taking on a struggling estate and transforming it into a reference of the Corbières over twenty years requires both a clear vision and an uncompromising commitment to quality. The organic certification — and the ongoing move towards biodynamics — gives us confidence in the integrity of the viticulture. The range is coherent: each wine has a reason to exist and a clear sense of place. We recommend these wines to confirmed amateurs of the Languedoc who want depth and character rather than easy fruit. At the table, the reds pair naturally with slow-cooked lamb, wild boar or aged sheep's cheese from the region; the whites are excellent with grilled fish, shellfish or a fine brandade de morue.
