In the mouth
Well-balanced and composed on the palate, with fine tannin structure supporting the dark fruit. The finish remains fresh and persistent, without heaviness.
On the nose
The bouquet unfolds with dark berries and cassis, complemented by subtle notes of cocoa and spice. There is an appealing freshness beneath the riper fruit character.
On the eye
Brilliant garnet with sustained depth of colour
Breeding
Aged 50% for 6 to 12 months in oak barrels of one to five wines and 50% in stainless steel vats.
A wine of considerable merit with venison in rich sauce, or the more rustic pleasures of cassoulet. The structure and restraint here suggest it will develop gracefully over several years, rewarding those who prefer wines of substance to mere ripeness.

CHATEAU OLLIEUX ROMANIS
Set on the south-facing slopes of Montséret in the Aude, Château Ollieux Romanis farms 60 hectares under certified organic viticulture at the heart of the Corbières appellation. When Pierre Bories took over in 2001, the estate was in serious financial difficulty; within two decades he had made it one of Languedoc-Roussillon's benchmarks. On red sandstone, clay and puddingstone soils, Carignan, Grenache, Syrah and Mourvèdre yield reds of real character, while Roussanne and Marsanne produce whites of genuine substance. At Halles Quercamps, we selected this estate for the rigour of its organic farming, the coherence of its range, and Pierre Bories's ability to express the singular terroir of the Corbières with precision.
