Set at the foot of the Montferrand castle in Valflaunès, Hérault, Château de Valflaunes covers 13 hectares of ancient calcareous scree within the AOC Languedoc. Founded in 1998 by Fabien Reboul, whose winemaking career took him through Burgundy, Oregon and New Zealand, the estate has been certified organic since 2021, working a Mediterranean palette of Syrah, Grenache, Mourvèdre, Carignan, Roussanne and Marsanne across red, white and rosé. At Halles Quercamps, we have selected this estate for the rigour of its viticulture, the precision of its blending and the integrity of a project firmly rooted in one of the Languedoc's most serious terroirs. A producer well worth following.

At the heart of the AOC Languedoc, Château de Valflaunes represents an uncompromising approach to terroir-driven viticulture: 13 hectares of certified organic vines tended by Fabien Reboul on the ancient limestone debris of Valflaunès, in the Hérault.

An estate born of an international journey

Fabien Reboul founded Château de Valflaunes in 1998, following years of formation and hands-on experience across three of the world's most instructive wine regions: Burgundy, Oregon and New Zealand. That breadth of exposure — from Pinot Noir's precision in the Côte d'Or to the bold, fruit-driven styles of the Pacific Northwest and the South Island — gave Reboul a rare perspective on what it means to express a place honestly through wine. Returning to the Languedoc, he chose Valflaunès not by chance but by conviction: a village tucked beneath the ruins of the Montferrand castle, in the shadow of the Pic Saint-Loup massif, where the soils and the climate conspire to produce wines of genuine character.

A terroir of ancient limestone

The estate's 13 hectares sit on a mosaic of millennial calcareous scree and clay-limestone soils, a geological inheritance that lends the wines both structure and a distinctive mineral freshness. The proximity of the Pic Saint-Loup — one of the Languedoc's most celebrated sub-zones — brings cooler nights and a more temperate growing season than much of the surrounding region, preserving natural acidity and aromatic finesse. The grape varieties planted reflect the Mediterranean vocation of the terroir: Syrah, Grenache, Mourvèdre and Carignan for the reds and rosés, Roussanne and Marsanne for the whites.

Certified organic farming

Château de Valflaunes has been certified under Agriculture Biologique since 2021, a formal recognition of a philosophy that Reboul had been developing since the estate's founding. Working without synthetic herbicides, pesticides or fertilisers, the team focuses on soil health and vine balance as the foundation of wine quality. This commitment to organic viticulture is not a marketing posture but a direct expression of the estate's respect for its land — and it shows in the clarity and definition of the wines.

The wine range

Château de Valflaunes produces wines across three colours under the AOC Languedoc appellation, all vinified from organically farmed fruit grown on the estate's calcareous soils in Valflaunès:

  • Red — structured, Mediterranean blends built principally on Syrah, Grenache and Mourvèdre, with Carignan lending depth and spice; suited to medium to long cellaring.
  • White — aromatic and textured, assembled from Roussanne and Marsanne; rich without heaviness, with the mineral lift characteristic of limestone terroirs.
  • Rosé — fresh and precise, reflecting the estate's Mediterranean grape varieties and the cooler influence of the Pic Saint-Loup microclimate.

Why we have selected Château de Valflaunes

We first took notice of Château de Valflaunes because of the coherence of Fabien Reboul's project: an internationally trained winemaker who chose to return to the Languedoc and invest in one of its most promising terroirs, rather than follow the path of easier commercial viticulture. The estate's certified organic status, its focus on indigenous Mediterranean varieties, and the quality of its limestone-driven soils in Valflaunès all point in the same direction — wines made with purpose and a clear sense of place.

We recommend these wines to enthusiasts who appreciate the southern Rhône and are ready to explore the best that the AOC Languedoc has to offer. They pair beautifully with slow-roasted lamb, grilled Mediterranean vegetables, and aged hard cheeses. The whites, in particular, are a natural match for fish prepared with herbs and olive oil.
