Breeding
Ageing for 2 to 3 years in the chalk cellars of Reims, protected from light and at constant temperature
On the eye
Pale golden yellow with subtle green glints. Brilliant, luminous appearance with active, persistent effervescence.
On the nose
Intense opening of fresh fruit, particularly ripe citrus. A refined floral character emerges, with white flowers and white stone fruits—white peach especially. The palate entry is supple and harmonious, with considerable roundness.
In the mouth
Restrained vinosity supported by excellent freshness. Notes of nectarine and citrus, with a pleasant mineral quality on the finish. The finish is lengthy and genuinely refreshing.

At table, this Champagne pairs exceptionally well with all shellfish and crustaceans. It is particularly well suited to raw fish preparations—a tartare of sea bass or gilt-head bream shows the wine to excellent advantage.

CHAMPAGNE RUINART

Founded on 1 September 1729 in Reims, Ruinart holds the distinction of being the oldest Champagne House in the world. Spanning 17 hectares across the Montagne de Reims and Côte des Blancs, the House works chalk soils of remarkable mineral character, its Gallo-Roman crayères listed as a UNESCO World Heritage site. Chardonnay lies at the heart of Ruinart's identity, lending its cuvées a characteristic aerial elegance and precise tension. The House joined the LVMH group in 1987 and holds HVE certification. At Halles Quercamps, we have selected this House for the consistency of its style, the depth of its historical roots, and the rigour of its viticultural commitments.
