M. Francois
A Basque wine naturally suits the cuisine of the South-West—confit duck, Bayonne ham, cassoulet—but do not overlook its versatility with red meat, game such as woodcock, or aged Ossau-Iraty cheese. The structure and fruit make it equally at home with spiced dishes. A wine that rewards patience but need not be cellared to be enjoyed.
