14 to 18 months in French oak barrels (approximately 60% new wood)
On the eye
Deep garnet robe with violet undertones, denoting good concentration and maturity potential.
On the nose
Intense bouquet of ripe dark fruits—blackcurrant, wild blackberry, preserved cherry—with secondary notes of dark chocolate, vanilla and liquorice emerging on aeration, evidence of refined oak treatment.
In the mouth
Well-balanced between richness and structure. The wine fills the palate with immediate presence, revealing layers of fruit and subtle spice through the mid-palate to a composed, lingering finish.

Château Dassault is a wine estate in the Saint-Émilion Grand Cru appellation (Bordeaux), classified Grand Cru Classé. Area: 24 hectares. Owned by the Dassault family since 1955. Grapes: Merlot (65%), Cabernet Franc (30%), Cabernet Sauvignon (5%). Clay-limestone and sandy-gravel soils. HVE certified and converting to organic. Available at Les Halles de Quercamps.
