Breeding
Aged 80% in new oak barrels and 20% in one-year-old barrels
On the eye
Deep purple-black at the core, with violet glints at the rim. Phenolic concentration evident from the glass.
On the nose
Elegant complexity unfolds with notes of liquorice, black pepper and violet. The bouquet develops gradually, revealing the wine's layered character and careful élevage.
In the mouth
Fresh, fruit-forward attack with good juiciness. Well-balanced structure with tannins fully integrated. The finish is persistent and clean, with no harsh edges.
M. Francois
Lamb is the natural pairing. A seven-hour braised leg or herb-roasted rack will allow the Merlot-based structure to shine. The wine's tannins possess sufficient grip to cut through the meat's richness whilst the fruit remains bright and focused.

Château Moulin Saint-Georges is a wine estate in the Saint-Émilion Grand Cru appellation (Bordeaux), classified Grand Cru Classé. Area: 7 hectares. Owned by the Vauthier family (also owners of Château Ausone). Grapes: Merlot (70%), Cabernet Franc (25%), Cabernet Sauvignon (5%). Clay-limestone soils. Vinified by the same team as Château Ausone.
