Breeding
14 to 18 months in French oak barrels (approximately 60% new wood)
On the eye
Deep garnet robe with violet glints, indicating fine concentration and structure.
On the nose
Intense bouquet of ripe dark fruits—blackcurrant, wild blackberry and preserved cherry—with secondary notes of dark chocolate, bourbon vanilla and liquorice emerging on aeration, reflecting noble oak élevage.
In the mouth
The palate is immediately full and generous, with a seamless balance between roundness and opulence. Fine-grained tannins provide structure without dominating.
M. Francois
A classically styled Saint-Emilion of considerable richness and voluptuousness, yet retaining the aromatic finesse of its terroir. Excellent with duck breast with figs or herb-crusted lamb. Drink from 2026 onwards.

Château Dassault is a wine estate in the Saint-Émilion Grand Cru appellation (Bordeaux), classified Grand Cru Classé. Area: 24 hectares. Owned by the Dassault family since 1955. Grapes: Merlot (65%), Cabernet Franc (30%), Cabernet Sauvignon (5%). Clay-limestone and sandy-gravel soils. HVE certified and converting to organic. Available at Les Halles de Quercamps.
