Breeding
14 to 18 months in French oak barrels (approximately 60% new wood)
On the eye
Deep garnet robe with violet glints, indicating fine concentration and structure.
On the nose
Intense bouquet of ripe dark fruits—blackcurrant, wild blackberry and preserved cherry—with secondary notes of dark chocolate, bourbon vanilla and liquorice emerging on aeration, reflecting noble oak élevage.
In the mouth
The palate is immediately full and generous, with a seamless balance between roundness and opulence. Fine-grained tannins provide structure without dominating.
A classically styled Saint-Emilion of considerable richness and voluptuousness, yet retaining the aromatic finesse of its terroir. Excellent with duck breast with figs or herb-crusted lamb. Drink from 2026 onwards.

CHATEAU DASSAULT
Set on the argilo-calcaire slopes of Saint-Émilion (Gironde), Château Dassault covers 40 hectares classified Grand Cru Classé, predominantly north-facing. Founded in 1862 as Château Couperie, the estate was acquired by Marcel Dassault in 1955 and renamed; the 2022 integration of the Faurie de Souchard vineyard brought it to its current size. Merlot leads the blend, supported by Cabernet Franc and Cabernet Sauvignon, yielding structured, well-framed reds true to the appellation's character. At Halles Quercamps, we have selected this château for the consistency of its vintages, the coherence of its encépagement, and the rigour reflected in its HVE certification. A Saint-Émilion of genuine reference — approachable now, yet built for the cellar.
