A wine of considerable merit with Moroccan tagines and slow-cooked meat dishes. The wine's natural acidity and moderate alcohol complement spiced preparations beautifully. Domaine Gauby is a wine estate in Calce (Pyrénées-Orientales), Roussillon. Run by Gérard and Ghislaine Gauby. Around 45 hectares farmed biodynamically. Grapes: Grenache, Carignan, Syrah, Mourvèdre, Macabeu. Appellations: Côtes du Roussillon Villages, IGP Côtes Catalanes. Cuvées: Muntada, Vieilles Vignes, Coume Gineste. One of the great names of Roussillon.
