In the mouth
The palate is structured yet refined. Fine-grained tannins provide backbone without dominance, whilst the finish extends with elegance and restraint. A wine of balance rather than power, with a delicate persistence.
On the nose
The bouquet unfolds with dark cherry and plum, layered with white pepper, garrigue, and a subtle mineral note. Aromas develop gradually, revealing hints of liquorice and dried herbs as the wine opens.

Breeding
10 months' élevage in 500L barrels, wooden foudres and concrete vats
M. Francois
Gauby's Vieilles Vignes demonstrates greater complexity and depth than the domaine's Les Calcinaires cuvée. The older vines contribute additional mineral definition and textural refinement, whilst maintaining the house's characteristic restraint and purity of expression.

Domaine Gauby is a wine estate in Calce (Pyrénées-Orientales), Roussillon. Run by Gérard and Ghislaine Gauby. Around 45 hectares farmed biodynamically. Grapes: Grenache, Carignan, Syrah, Mourvèdre, Macabeu. Appellations: Côtes du Roussillon Villages, IGP Côtes Catalanes. Cuvées: Muntada, Vieilles Vignes, Coume Gineste. One of the great names of Roussillon.
