  • Silky in texture with evident finesse, the wine possesses remarkable length on the finish. These qualities suggest a wine of genuine poise, neither heavy-handed nor insubstantial, but rather finely balanced.
  • The 2018 vintage shows considerable potential for development in bottle. Cellaring for five to ten years will allow the wine to evolve gracefully, revealing further complexity and integration of its component parts.

In the mouth
The attack is supple and welcoming, with red fruit flavours predominating. A pleasant spiciness adds dimension, whilst the tannin structure is present yet refined, providing a framework for the wine's considerable length.
On the nose
The bouquet opens with red cherry and subtle floral notes, complemented by a hint of leather and spice. The aromatics develop with air, revealing further layers of complexity characteristic of the terroir.
On the eye
Intense ruby, with good depth of colour suggesting ripe fruit and concentration.
Breeding
Large and small oak casks. 30 months' ageing
M. Francois
This wine pairs exceptionally well with game, particularly venison and wild boar. The structure and tannin profile complement the richness of such dishes, whilst the wine's acidity provides necessary balance. It would also suit duck confit or herb-roasted lamb with confidence.

Domaine Gauby is a wine estate in Calce (Pyrénées-Orientales), Roussillon. Run by Gérard and Ghislaine Gauby. Around 45 hectares farmed biodynamically. Grapes: Grenache, Carignan, Syrah, Mourvèdre, Macabeu. Appellations: Côtes du Roussillon Villages, IGP Côtes Catalanes. Cuvées: Muntada, Vieilles Vignes, Coume Gineste. One of the great names of Roussillon.
