In the mouth
Supple, well-integrated tannins provide structure without harshness. The wine possesses good length and a clean finish, with the mid-palate showing the concentration expected of Grand Cru classification.
On the nose
Powerful fruit-forward aromatics with dark berry notes, complemented by subtle earthy undertones characteristic of the Saint-Emilion terroir. The bouquet develops with air.
On the eye
Deep garnet robe with considerable intensity and clarity
M. Francois
This wine suits beef preparations particularly well—a côte de boeuf or magret de canard would be excellent choices. The structure and tannin profile also complement roasted lamb dishes such as a shoulder or leg. Decanting an hour before service will allow the wine to express itself fully.

CHÂTEAU GAILLARD

Set across 20 hectares in Saint-Hippolyte, Gironde, Château Gaillard produces red Saint-Émilion on the clay-sandy and silty-sandy soils typical of Bordeaux's right bank, farmed entirely under organic certification. A family property with documented roots stretching back to 1792, the château was taken over in 1998 by Catherine Papon-Nouvel, a trained oenologist who has steered it towards a more terroir-driven viticulture without breaking from over three centuries of family continuity. At Halles Quercamps, we have selected this château for the rigour of its organic approach, the character of its Merlot and Cabernet Franc blends, and the integrity of a family project rooted in one of Bordeaux's most demanding appellations. A dependable reference for lovers of authentic Saint-Émilion.
