Based in Morogues (Cher), Domaine Pellé farms 50 hectares of Kimmeridgian argilo-calcareous marl within the AOC Menetou-Salon — accounting for a remarkable 25% of the appellation's total production. Founded in 1920 by Paul Pellé and now led by fourth-generation Paul-Henry Pellé since 2007, the estate is farmed entirely to organic and biodynamic principles. Sauvignon Blanc and Pinot Noir thrive on these elevated hillside sites at 300–350 metres, expressing a fine, stony minerality. At Halles Quercamps, we have selected this estate for the rigour of its agronomic commitment, the precision of its winemaking, and the consistent quality of its whites, reds and rosés across successive vintages. A benchmark address in the central Loire.

Domaine Pellé stands as one of the defining estates of the AOC Menetou-Salon, farming 50 hectares of Kimmeridgian marl in Morogues to organic and biodynamic standards — and accounting, alone, for a quarter of the entire appellation's production.

A century of roots in Menetou-Salon

The estate was founded in 1920 by Paul Pellé, at a time when Menetou-Salon was still a largely unsung appellation in the Cher département of the central Loire. Over the following decades, the family quietly built one of the most substantial vineyard holdings in the area, remaining anchored to the village of Morogues and its distinctive soils. In 2007, Paul-Henry Pellé — the fourth generation of the family — took over the direction of the estate, bringing with him a clear ambition: to deepen the agronomic work in the vineyard and to let the terroir speak with greater precision in the glass. His arrival marked a turning point, consolidating the estate's reputation not merely as a large producer but as a qualitative reference for the appellation.

Kimmeridgian terroir: the 'oreille de poule' soils of Morogues

The vineyards of Domaine Pellé sit on what local growers call terre blanche — the pale, chalky-clay Kimmeridgian marls also known as oreille de poule for the fossilised oyster shells embedded within them. These are the same geological formations that underpin the great vineyards of Chablis and Sancerre, and they impart a characteristic mineral tension and fine acidity to the wines. The hillside sites around Morogues are planted at altitudes of 300 to 350 metres, ensuring strong sunlight exposure alongside the cooler temperatures that preserve freshness and aromatic definition. It is a terroir that rewards patience — both in the vineyard and in the cellar.

Organic and biodynamic farming

Domaine Pellé holds full organic certification and operates to biodynamic principles across its 50 hectares. This is not a recent marketing decision but a genuine agronomic commitment, reflected in the health of the soils, the vigour of the vines, and the vitality of the wines themselves. Interventions in the cellar are kept to a minimum, allowing the character of each vintage and each parcel to come through clearly in the finished wines.

The wines of Domaine Pellé

The estate produces white, red and rosé wines under the AOC Menetou-Salon, from two grape varieties:

  • Menetou-Salon Blanc — 100% Sauvignon Blanc, grown on Kimmeridgian marl; expect citrus, white flowers and a firm, stony minerality with excellent length.
  • Menetou-Salon Rouge — 100% Pinot Noir; lighter in frame than Burgundy, with red fruit, earthy notes and a silky texture shaped by the limestone soils.
  • Menetou-Salon Rosé — also from Pinot Noir; fresh, precise and dry, with the same mineral backbone that runs through the entire range.

Why we have selected Domaine Pellé

At Halles Quercamps, we have followed Domaine Pellé across a number of vintages, and our confidence in the estate rests on three clear foundations. First, the coherence of Paul-Henry Pellé's agronomic approach: organic and biodynamic farming on one of the Loire's most expressive terroirs is not a compromise but a conviction, and it shows in the wines. Second, the consistency of the range: whites, reds and rosés all deliver the same mineral clarity and honest character, year after year. Third, the estate's singular weight within its appellation — representing 25% of Menetou-Salon's total production — gives it a breadth of parcel selection that few producers can match.

We recommend these wines to lovers of the central Loire who seek an alternative to Sancerre without sacrificing precision or depth. The whites pair beautifully with grilled fish, goat's cheese and shellfish; the reds suit roast guinea fowl, charcuterie or a simple lentil dish.
