List of products by brand DOMAINE LA BOUYSSE

Based at Saint-André-de-Roquelongue in the Aude, Domaine la Bouysse farms 40 hectares across two contrasting Corbières terroirs: sandy sandstone soils around Fontfroide and clay-limestone at Boutenac. Fourth-generation vignerons Martine Pagès and Christophe Molinier took over in 1996, leaving the local cooperative to vinify their own fruit — and committed to organic farming from 2010, earning AB certification in 2013. At Halles Quercamps, we have selected this estate for the rigour of its certified organic viticulture, the breadth of its southern grape varieties, and the precision with which it captures two distinct faces of the Corbières appellation. Characterful reds, aromatic whites and honest rosés well worth the attention of any serious Languedoc enthusiast.

Domaine la Bouysse represents a demanding vision of what Corbières can be: 40 hectares farmed organically at Saint-André-de-Roquelongue in the Aude, by a family now in its fourth generation of vine-growing.

A family estate rooted in two distinct Corbières terroirs

When Martine Pagès and Christophe Molinier took over the family estate in 1996, they made a defining choice: to leave the cooperative and vinify their own grapes, taking full responsibility for the identity of their wines. That decision marked the beginning of a new chapter — one built on independence, precision and a deepening understanding of the land they had inherited.

The estate straddles two contrasting geological worlds. To the west, the Fontfroide terroir offers sandy sandstone soils — light, well-drained, and ideally suited to wines of freshness and aromatic finesse. To the east, the Boutenac terroir brings clay-limestone ground, richer and more structured, capable of producing reds of real depth and ageing potential. Together, these two terroirs give Domaine la Bouysse a breadth of expression that few estates in the appellation can match. The vine portfolio reflects this diversity: Grenache noir, Carignan, Syrah and Mourvèdre for the reds and rosés; Grenache blanc, Vermentino and Maccabeu for the whites — a palette of authentically Mediterranean varieties, each finding its natural home in one or other of these soils.

Organic farming: a long-term commitment

The conversion to organic viticulture began in 2010, and the estate was awarded AB (Agriculture Biologique) certification in 2013. This was not a marketing decision but a logical extension of the philosophy Martine and Christophe had been developing since 1996: to work with the land rather than against it, to preserve the health of the soil, and to allow each terroir to speak as clearly as possible in the glass. All 40 hectares are now farmed without synthetic pesticides or herbicides, with close attention paid to vine balance and biodiversity across the estate.

Winemaking: terroir-led, without artifice

Vinification at Domaine la Bouysse follows the same philosophy as the viticulture: attentive, precise, and respectful of the raw material. The range covers red, white and rosé Corbières, each crafted to express the character of its constituent varieties and the specific parcel from which the fruit was harvested. The result is a coherent, honest range that speaks clearly of the southern Languedoc — without excess oak, without overextraction, and without compromise.

The wines of Domaine la Bouysse

  • Corbières Rouge — structured, warm and spice-driven, built on Grenache noir, Carignan and Syrah from the clay-limestone soils of Boutenac; suited to the cellar as much as to the table.
  • Corbières Blanc — aromatic and textured, drawing on Grenache blanc, Vermentino and Maccabeu from the lighter Fontfroide sandstone; fresh, southern and food-friendly.
  • Corbières Rosé — direct and fruit-forward, honest in style, reflecting the estate's commitment to clean, expressive winemaking across all three colours.

Why we have selected Domaine la Bouysse

At Halles Quercamps, we have been listing Domaine la Bouysse because it exemplifies precisely what we look for in a Languedoc estate: independence of spirit, rigour in the vineyard, and wines that genuinely reflect where they come from. The AB organic certification, earned after three years of conversion, gives us confidence in the integrity of the viticulture. The two contrasting terroirs — Fontfroide and Boutenac — provide a compelling argument for exploring the full range rather than stopping at a single bottle. And the decision taken in 1996 to leave the cooperative and vinify independently remains, in our view, the clearest signal of a producer's ambition.

We recommend these wines to enthusiasts who enjoy discovering the Corbières appellation beyond its better-known neighbours, and to those building a cellar of southern French reds with genuine character. At the table, the reds pair naturally with cassoulet, slow-roasted lamb or aged hard cheeses; the whites are excellent alongside grilled fish, ratatouille or a well-seasoned tapenade.
