At the foot of the Cévennes, in Sardan in the Gard, Domaine Sainte Octime farms 25 hectares of clay-limestone soils under organic certification within the Languedoc appellation. Passed down through sixteen generations of the Rampon family since the fifteenth century, the estate is now led by Lionel Rampon, who took the reins in 2007 following studies in viticulture and oenology. That depth of continuity finds expression in a range of reds, whites, and rosés that speak honestly of their Cévenol terroir. At Halles Quercamps, we have selected this estate for the rigour of its organic viticulture, the breadth of its grape varieties — from Syrah and Grenache to Viognier and Muscat Petit Grain — and a family story that few producers anywhere can match. A Languedoc estate well worth following.

At the very foot of the Cévennes, on the commune of Sardan in the Gard, Domaine Sainte Octime represents something increasingly rare in French wine: sixteen unbroken generations of the same family, tending the same terroir, since the fifteenth century.

Six centuries of family continuity

The Rampon family have been cultivating vines at Sardan since around 1400 — a span of history that encompasses the Wars of Religion, the Revolution, phylloxera, and two world wars, yet the estate has remained intact and in family hands throughout. Lionel Rampon, the sixteenth generation, took over in 2007 after completing a formal training in viticulture and oenology, bringing both inherited instinct and technical rigour to a property his ancestors shaped over centuries. This is not a story of reinvention or outside investment; it is one of patient, generational stewardship — and it shows in the character of the wines.

A Cévenol terroir on clay-limestone soils

Sardan sits at the first foothills of the Cévennes, where the garrigue gives way to cooler elevations and the soils shift to argilo-calcaire — clay-limestone — that lends structure and freshness to the wines. The estate covers 25 hectares, planted to a broad palette of varieties that reflects both the Mediterranean character of the Languedoc appellation and the estate's own particular ambitions: Syrah, Grenache, Cinsault, Cabernet, Merlot and Nielluccio for the reds and rosés; Chardonnay, Viognier, Roussanne, Sauvignon and Muscat Petit Grain for the whites. The diversity of this encépagement is deliberate — it allows the estate to express the full range of what this corner of the Gard can produce, from structured, garrigue-inflected reds to aromatic, freshly drawn whites.

Certified organic viticulture

Domaine Sainte Octime is certified under Agriculture Biologique, the French national organic standard. For Lionel Rampon, this is not a recent marketing decision but a considered commitment to the soils his family has farmed for six centuries. Working without synthetic herbicides, pesticides or fertilisers on clay-limestone terroir at Cévenol altitude, the estate maintains the health of its vineyard ecosystem while preserving the natural expression of the fruit. The organic approach is consistent across all three colours produced at the estate.

The wine range: reds, whites, and rosés

  • Reds (AOC Languedoc): built on Syrah, Grenache, Cinsault and Merlot, with depth of fruit, garrigue notes and the structure that clay-limestone soils reliably provide.
  • Whites (AOC Languedoc): drawn from Viognier, Roussanne, Chardonnay, Sauvignon and Muscat Petit Grain — a range that spans the floral and the mineral, with genuine aromatic complexity.
  • Rosés (AOC Languedoc): fresh, dry expressions of the Mediterranean palette, suited to the table as much as to the aperitif.

Why we have selected Domaine Sainte Octime

We first came to Domaine Sainte Octime through the combination of two things that are rarely found together: a family history of quite extraordinary depth, and a present-day approach — organic viticulture, serious oenological training, a broad and well-chosen encépagement — that matches it. Lionel Rampon is not trading on his ancestors' reputation; he is building on it with care and precision. The wines are honest expressions of their Languedoc terroir: no artifice, no excess, and a genuine sense of place. We recommend this estate to confirmed amateurs of southern French wine who value provenance and organic integrity as much as the wine in the glass. At the table, the reds pair well with slow-cooked lamb or a daube provençale; the whites are excellent with grilled fish or a plateau of local cheeses.
