Breeding
Aged in stainless steel and partially in oak barrels for 6 to 9 months, imparting fine complexity and silky texture to the wine
On the eye
Pale yellow with golden highlights, bright and translucent.
On the nose
Expressive and refined. White flowers, citrus fruit and stone fruit aromas emerge, underpinned by a mineral note that speaks to the vineyard's geology.
In the mouth
Lively and well-balanced. Flavours of peach, pear and lemon develop on the palate, with a subtle honey note in the finish. The wine possesses good length and a clean, refreshing conclusion.

DOMAINE SAINTE OCTIME
At the foot of the Cévennes, in Sardan in the Gard, Domaine Sainte Octime farms 25 hectares of clay-limestone soils under organic certification within the Languedoc appellation. Passed down through sixteen generations of the Rampon family since the fifteenth century, the estate is now led by Lionel Rampon, who took the reins in 2007 following studies in viticulture and oenology. That depth of continuity finds expression in a range of reds, whites, and rosés that speak honestly of their Cévenol terroir. At Halles Quercamps, we have selected this estate for the rigour of its organic viticulture, the breadth of its grape varieties — from Syrah and Grenache to Viognier and Muscat Petit Grain — and a family story that few producers anywhere can match. A Languedoc estate well worth following.
