An estate born from a lieu-dit, driven by conviction

Thomas Pico comes from a winegrowing family long established in the Yonne. When he took over the family holding in 2004, he chose to rebuild from the ground up. He replanted the lieu-dit known as Pattes Loup — literally 'wolf's paws' — and in 2005 gave the estate its name. From the outset, his ambition was clear: to produce Chablis that reflects its terroir without compromise, and to do so through viticulture that respects the living soil beneath the vines.

Kimmeridgian terroir at the heart of everything

The estate's 15 hectares lie on the south-facing slopes of Courgis, on the left bank of the Serein.
