DOMAINE PATTES LOUP
Based in Courgis in the Yonne, Domaine Pattes Loup farms 15 hectares of Chardonnay across the Kimmeridgian clay and marl soils that define Chablis. Thomas Pico, a third-generation winegrower, founded the estate in 2005 by replanting the lieu-dit that gives it its name, earned Ecocert organic certification in 2009, then extended his approach to biodynamics. His wines — exclusively white — deliver the sharp minerality and saline tension that mark Chablis at its finest. At Halles Quercamps, we selected this estate for the rigour of its viticulture, its coherent organic and biodynamic commitment, and the precision with which each cuvée speaks of its Kimmeridgian terroir. A dependable reference for anyone seeking Chablis in its most direct and honest form.
