Fermentation and ageing in new oak barrels for approximately 2 years
On the eye
Brilliant golden hue with amber undertones, characteristic of noble rot-affected Petit Manseng.
On the nose
Ripe apricot and praline dominate, with notes of preserved medlar and roasted citrus zest. The aromatic profile speaks to both fruit concentration and the subtle oxidative development of extended élevage.
In the mouth
Beautifully balanced between richness and nervous acidity. The palate reveals grilled and almost chocolatey notes that extend through a lengthy finish, demonstrating the wine's structure and complexity.

This is quintessential Jurançon moelleux—a wine that demands a considered approach to food pairing. Serve it with a refined dessert course: perhaps a tarte Tatin, crème brûlée, or blue cheese. DOMAINE CAUHAPE

Domaine Cauhapé is a wine estate in the Jurançon appellation (South-West France). Founded by Henri Ramonteu. Around 42 hectares on the Pyrenean foothills. Grapes: Gros Manseng and Petit Manseng. Producing dry and sweet Jurançon. Cuvées: Symphonie de Novembre, Noblesse du Temps, Quintessence. Wines of great aromatic complexity.
