In the mouth
Broad, well-integrated tannins provide structure without harshness. The mid-palate carries good weight, whilst the finish remains fresh and savoury, with lingering spice and red fruit notes.
On the nose
The bouquet unfolds gradually, revealing red fruits—cherry and plum—alongside peppery spice and subtle oak influence. The aromatic profile is restrained and elegant rather than overt.
On the eye
Deep ruby-red colour, intense and luminous, suggesting ripe fruit and good concentration.
Breeding
12 months in barrels of 2-3 wines for one-third of the volume and two-thirds remaining in stainless steel
This wine pairs particularly well with poultry dishes prepared with Indian spicing—the wine's peppery character and freshness complement such cuisine admirably. Also suited to herb-dressed game birds and Mediterranean vegetable preparations.

DOMAINE DE LA CITADELLE
Domaine de la Citadelle is a wine estate in Ménerbes (Vaucluse), Luberon appellation. Founded in 1990 by Yves Rousset-Rouard. Around 42 hectares on clay-limestone soils. Grapes: Grenache, Syrah, Mourvèdre, Vermentino, Viognier. Organically farmed. The estate also houses a corkscrew museum. Available at Les Halles de Quercamps.
