On the eye
Deep golden robe with brilliant clarity. Dense, persistent effervescence and an airy, refined mousse.
On the nose
Fine and rounded, opening with white stone fruits before evolving towards mirabelle, redcurrant, citrus and white florals. The aromatic development is gradual and composed.
In the mouth
Creamy attack leading to a complex, ample palate of considerable intensity. The finish is persistently fruity with a gentle acidity that sustains without sharpness.
M. Francois
This is a champagne of genuine aromatic richness—the kind that rewards sipping rather than gulping. I find it particularly well-suited to tapas, charcuterie boards and aged cheeses, where its structure and acidity cut through richness without dominating. A thoughtful aperitif for those who prefer substance to showiness.
