Breeding
The wine is aged in oak barrels, often from multiple vintages, for 12 to 18 months to stabilise the structure and refine complexity without imparting dominant oaky notes.
On the eye
Brilliant, crystalline robe of pale gold. The colour speaks of careful harvesting and gentle handling.
On the nose
Stewed apricot and peach dominate the bouquet, with secondary notes of quince and honeyed stone fruit. The aromatics are expressive without being heavy.
In the mouth
The palate mirrors the nose: ripe stone fruits and exotic notes—mango, lychee—balanced by a refreshing acidity that prevents heaviness. The finish is clean and persistent.

I recommend this wine with foie gras, blue cheeses, and warm fruit desserts—a charlotte aux poires or tarte Tatin served still-warm. It also stands alone as a meditation wine. The 2011 vintage shows excellent ageing potential; those with patience may cellar it a further five to eight years.
