Breeding
The wine is aged in oak barrels, often from multiple vintages, for 12 to 18 months to stabilise the structure and refine complexity without imparting dominant oaky notes.
On the eye
Brilliant pale gold with crystalline clarity and considerable intensity of colour.
On the nose
Stewed stone fruits dominate the bouquet, with apricot and peach to the fore. Secondary notes of honey and candied citrus peel emerge with aeration, reflecting the wine's maturity.
In the mouth
The palate echoes the nose's stone fruit character, enriched by tropical fruit notes and a subtle minerality. Gentle acidity provides freshness and definition, whilst the finish shows excellent length and persistence.
M. Francois
This wine pairs admirably with foie gras, blue-veined cheeses, and classical French desserts—particularly pear charlotte or warm tarte Tatin. Its balance between sweetness and acidity makes it equally suited to spiced dishes or as an aperitif wine of considerable sophistication.
