Breeding
Ageing in temperature-controlled stainless steel vat.
On the eye
Pale, luminous gold with subtle green reflections.
On the nose
Open and expressive: yellow orchard fruits, blackcurrant leaf, violet and honeysuckle. Distinctly mineral undertones suggest the limestone-rich terroir.
In the mouth
Supple and well-balanced, with citrus and orchard fruit flavours complemented by a pronounced mineral finish. The acidity is refined rather than aggressive, lending freshness and length.
M. Francois
A natural companion to oysters, scallops and white fish. Consider it also with roasted chicken, blanquette de veau, asparagus and goat's cheese salad, or aged sheep's cheese. The wine's mineral character makes it particularly suited to seafood preparations and lighter cream sauces.

Vignoble Dampt Frères is a family wine estate in Collan, in the Chablis vineyard (Burgundy). Grape: Chardonnay exclusively. Kimmeridgian soils (clay and limestone). Appellations: Chablis, Petit Chablis, Chablis Premier Cru, Irancy. Around 35 hectares of vines. Stainless-steel vinification to preserve freshness and minerality. Available at Les Halles de Quercamps.
