In the mouth
Crisp and mineral-driven, with a tense, linear structure. The palate is clean and precise, finishing with saline minerality and a persistent, dry finish that speaks to Chablis terroir.
On the nose
Expressively mineral, with white stone and citrus notes. A subtle herbaceous edge emerges as the wine opens, revealing hints of green apple and flint.
On the eye
Pale gold with greenish glints, characteristic of cool-climate Chardonnay.
I recommend this wine as an aperitif companion, and it is particularly well-suited to oysters and shellfish platters. The mineral backbone cuts through the richness of seafood beautifully. It will also serve well with lighter fish dishes and goat's cheese. A genuine expression of Chablis, unpretentious and food-focused.
