Une vibration interne exceptionnelle. Le vin n'est pas "gras", il est "tendu". La minéralité calcaire apporte une sensation de "caillou" en bouche
L'Échelier Blanc est pour moi le sommet de la tension chez Thierry Germain. C’est un vin qui ne triche pas : il est droit, vertical et d'une pureté cristalline. On est plus proche de l'esprit d'un grand Chablis Grand Cru que d'un Chenin ligérien classique. C'est un vin de terroir pur, une véritable 'lame de roche' qui impressionne par son énergie et sa longueur saline. Un grand vin de gastronomie et d'émotion. S'appréciera aussi bien sur un tartare de daurade, des petites cocottes coquillettes, crevettes et crème curry ciboulette...
